
Global protein consumption is projected to grow by 30% by 2025. In a context where animal protein consumption already accounts for 15% of carbon emissions, it is imperative to find new, more sustainable protein sources for the planet. Yeasty produces a protein-rich super-ingredient – made from brewer's yeast – for the food industry.
The technological innovation of this foodtech startup, co-accelerated by 21st by CentraleSupélec and AgroParisTech, is based on eliminating the molecules responsible for the bitterness of beer and yeast recovered from brewers, using a process that alters neither the product's naturalness nor its nutritional properties.
This funding round will enable Yeasty to industrialize the production of samples, allowing food manufacturers to begin testing them in recipes such as meat alternatives, pasta, protein biscuits, or bars and shakes for athletes.
The company's goal by 2025 is the construction of a first industrial site with an annual capacity of 5,000 tons.
