Given that animal protein consumption already accounts for 15% of carbon emissions, it is imperative to find new, more sustainable protein sources for the planet. Onima produces a protein super-ingredient – made from brewer's yeast – for food manufacturers. Our main technological innovation lies in eliminating the molecules responsible for the bitterness of beer and yeast recovered from brewers, using a process that alters neither the product's naturalness nor its nutritional properties.
Business model?
Circular economy and co-product valorization. We take brewer's yeast off their hands at a low cost for us, but an attractive price for them. We then process the yeast to create a delicious ingredient that we sell raw to food manufacturers.
Challenges in the coming months ?
The first challenge will be to scale up our processes, with the goal of starting sample production. This will allow us to test the integration of our product into industrial recipes to validate their interest and market potential.
